French Peach Galette

 

Crust

  • 1 Package Active Dry Yeast
  • ¼  Cup Lukewarm Water
  • 2 Cups All Purpose Flour, OR (2 Cups Whole Wheat Pastry Flour)
  • ¼ Cup Sugar
  • 1 Fine Sea Salt
  • ¾  Cup Unsalted Butter – 1/2” pieces
  • 1 Large Egg, lightly beaten
  • 1 Tsp Vanilla
  • “Bench” Flour

Fruit Filling

  • 4 Large Ripe Peaches – 1/4” slices
  • 3 TB Flour
  • ¼ Cup Sugar

Topping 

  • 2 Tablespoons Raw Sugar (Turbinado or Demedera)
  • 1 Egg White

Before you Begin

Preheat the Oven to 400F. Prepare a large baking sheet with parchment paper.

Step One

Combine yeast and warm water in a one-cup measure, let stand 5 minutes. Place flour, 1/4-cup sugar, and salt in the bowl of a food processor. Add the butter, pulsing until the mixture looks like coarse meal. Combine the yeast mixture, the egg and vanilla. Slowly add it to the flour; process until the dough clumps together and begins to form a ball.  On a cutting board sprinkled with the “bench” flour, (a couple of TB of extra flour), shape the dough into a flat disc, cover with plastic wrap and chill for at least 1 hour.

Step Two

Combine the filling ingredients and toss to coat.

Step Three 

Remove the dough from the fridge, and pat the dough with your fingers into a free formed circle on the parchment covered sheet pan. Spread the Peach filling over the dough to within 1 inch of the edge. Fold the edges of the dough over the fruit.  Paint the exposed crust with the egg white, and then sprinkle the crust with the turbinado sugar. Bake at 400 degrees for 20 minutes, or until the crust is golden brown.
