Chef/Dietician Michele Redmond and Healthy Chef Partyologist Nancy Waldeck…
met at a professional culinary conference and bonded immediately over their love of food, wine, travel and culture. Michele is a Registered Dietitian Nutritionist, food writer, food culture guide and food enjoyment activist. She leads the Taste Workshop which offers local and international culinary nutrition and taste education workshops for food professionals and the public. Healthy Chef Partyologist Nancy Waldeck’s exuberant approach to healthy cuisine and fun wine leads her to deliver over 100 classes a year in interesting locations – from an United States embassy to corporate offices like Google, Southern Company and Norfolk Southern, from Hospital Wellness Centers and Blue Cross Blue Shield to Farmers Markets, National Television and Conferences from 10 to 1000.
Chef Michele Redmond is a Registered Dietitian Nutritionist, food writer, food culture guide and food enjoyment activist. She leads the Taste Workshop which offers local and international culinary nutrition and taste education workshops for food professionals and the public. Michele teaches culinary nutrition at Arizona State University has a private cooking school and provides on-site culinary nutrition events for worksite wellness.
Michele has been a chef dietitian for over ten years including teaching at a culinary school, hospital diabetes center, Arizona State University, Mesa Community College and Le Cordon Bleu Paris Headquarters in Paris. Her food service experience includes work as a caterer, research chef, cook and food consultant for food companies. Her culinary degree is from Le Cordon Bleu in
Paris.
She is also graduate of Arizona State University, University of Arizona, Florida State University and the HEG Advanced Studies of Taste program with the University of Reims in France. Most importantly she loves cheese. And Bread. And French fries.

A Culinary Adventure through the Wine, Food and Culture of Spain
2016 : September 28th – October 4th
From Madrid to Cuenca, Toledo to Segovia we’ll travel to some of the most unexplored areas of Spain for fabulous wine and food, museums and cultural experiences. Even if you’ve traveled to Spain before, don’t miss this opportunity to
eat, drink and learn like a local.
Day One – Wednesday, September 28th
We’ll meet you at Madrid’s Barajas Airport with our luxury bus and by noon we’ll be tasting wine at one of the area’s best wineries and enjoying lunch with some new favorite wines. Then we’re off to Cuenca for a city tour and a quick museum stop. We’ll have dinner early tonight, to give tired travelers a break before our big day on Thursday.
Day Two – Thursday, September 29th
The morning begins early with an optional morning hike to see the best views of Cuenca – followed by breakfast. A short ride in our bus will take us to the Utiel-Requna area and our first wine tasting of the day at the Art on the Barrel Museum, which up until now has only been on view at the Valencian Institute of Modern Art (IVAM). After tasting, touring and lunch, we’ll head to Valencia to two interesting wineries, to appreciate a wide range of Spanish wines, from still to sparkling. In the late afternoon, we’ll return to Cuenca for a delicious dinner.
Day Three – Friday, September 30th
We’re heading to Toledo today, for a variety of activies and of course, wonderful food and wine. On the way we will visit Finca Loranque, the oldest winery in the region, an estate that celebrates the history of the area, the unique art and the delicious wine. For lunch today, we’ll visit a special restaurant specializing in tapas and small plates of the region. You’ll have the evening to yourself, (maybe with some new friends?), in this beautiful and easy-to-wander-through city
Day Four – Saturday, October 1st
A short ride to the region of Valdepeñas awaits us today. We’ll experience the flavors, colors, textures and sounds of this region in person as we enjoy an unforgettable day with the proud people from three wineries and the interesting cuisine native to this fascinating slice of Spain. After we return to the hotel, we’ll gather for a casual dinner.
Day Five – Sunday, October 2nd
The Palacio Real de La Granja de San Ildefonso awaits us today, and after a tour of the gardens and palace we’ll head to a leisurely lunch with wine pairing. We’ll pop on the bus, and before you know it, we’ll be in Segovia, where we’ll dine at El Bernardino, one of the first and most famous restaurants in Segovia. Some of its famous dishes include “Iberico” cured Ham, Octopus Galicia style and Grilled Sea Prawns and the mouth-watering Suckling Pig.
Day Six– Monday, October 3rd
The DO of Rueda awaits us today. Our first visit will be at a winery that specializes in white wines, Verdejo, Sauvignon Blanc and Chardonnay await us. Lunch follows with two exceptional wine tours in the afternoon. The evening will be your own in Segovia, the city is ready to welcome you!
Day Seven– Tuesday, October 4th
We’ll have a morning ride to Madrid, check into our wonderful hotel and head out for a Spanish cooking class – we’ll make our own lunch! A brief tour of the Museo Del Prado will finish our afternoon and we’ll rendezvous back at the hotel for dinner and tapas. It’s our final night in Spain, and we don’t want to leave without experiencing an exciting Flamenco close-up in an authentic cellar.
Day Eight – Wednesday October 5th
We’ll say Adiós until our next visit to unforgettable Spain. We’ll meet early in the morning to share a final breakfast with all and get you off to the airport in time for flights back to the states.

Tapas are Spain’s beautiful small plates, perfect for a dinner of grazing and socializing! Join Healthy Chef Partyologist Nancy Waldeck and Kristina and Dan Limoges, the owners of MOJO Villajos Spanish condiment. We’ll get hands on to create eight delicious and easy tapas with ingredients you can find in your local grocery store. A Sparkling Adventure of Wine, Beer, Food and Fun in Belgium, France, Luxembourg and Germany
Breweries and Mussels in Brussels, Champagne in the Montagne de Reims, Vallee de la Marne and the Cotes des Blancs. Sekt in the Mosel and Cremant from Luxembourg along with Beer in Bruge and Bitburg.
Day One – Saturday
We’ll meet you at the Brussels Airport and board our luxurious bus. (You’ll like our bus and wonderful driver – but wewon’t let you get too comfortable. Our longest bus ridefor the whole week will be just a little over 2 hours.) A guided tour of Belgian Chocolates is your first treat in this interesting capital. Lunch, and a fun brewery tour follows. An early dinner in an authentic Belgian Pub frequented by locals in-the-know closes our first day of adventure.
Day Two – Sunday
We’re off to the city of Bruges, to enjoy a city walk and a captivating canal tour via boat. Besides beer and chocolate, Belgium’s other famous culinary delights like waffles, mussels and frites are on the menu today. We’ll return to Brussels via the city of Ghent, a charming port city and cultural hub.
Days Three and Four – Monday and Tuesday
Off to France where Champagne will be the beverage of choice for the next two days! You’ll learn more about the fascinating story of this celebrated fizz by visiting historic sights, renowned champagne houses and talking to local growers, winemakers and bubbly advocates.
Day Five – Wednesday
The “Fruit Bowl” of France, Lorraine captures our attention today. Learning about Eau de Vie, (or the “water of life” in French), is our quest here. Mirabelle, created from plum trees is the specialty of this area; Lorraine is the only region in the world where there is such a high concentration of the juicy, delicious fruit trees. This eau de vie is so special; there is even a French Appellation, or guarantee of quality for it! After our special Eau de Vie tasting, we head to the Duchy of Luxembourg to experience traditional culinary treats like the incredible Ardennes salt-cured air-dried ham that is only made in Luxembourg. Of course we’ll share all the perfect accompanying beverages!
Day Six – Thursday
After an overnight in Trier, Germany we begin the day by tracing ancient Roman footsteps and sipping Sekt – the sparkling wine of Germany. Next, off to Bitburg, acclaimed for its exceptional brews and generous regional cuisine
Day Seven – Friday
A special visit awaits us today – Aachen, the home of King Charlemagne and the relics of his reign of the Holy Roman Empire. Along with fine wine and incredible food, we’ll have a special international sight/surprise waiting for you! Our last overnight will be back in Brussels, and we’ll celebrate our adventures with a fabulous farewell dinner.
Day Eight
We’ll send you off to the airport with good coffee and a wonderful breakfast, so you can head home in comfort, together with memories, new friends, and knowledge that will last forever.

Day One – Saturday We’ll meet you at the Stuttgart Airport and board our luxurious bus. (You’ll like our bus and wonderful driver – but we won’t let you get too comfortable. Our longest bus ride for the whole week will be just a little over 2 hours.)Today we’ll visit a weekly farmers market, a wine tasting and cellar tour in Bregenz, Austria, and end with dinner and wine pairing in Lindau – a city and an island on the eastern side of Lake Constance, a gorgeous freshwater lake in Germany.
Day Two – Sunday Lots of touring, tasting today – it’s a tough job but someone has to do it! We’ll depart after a traditional German breakfast for the Abbey of Birnau, home of one of the loveliest Baroque churches in southern Germany, (did you know what an important role the church played in the wines we love today?) The city of Meersburg, and lunch awaits us and then off to the Baden Wuerttemberg State winery followed by a stroll thru the city and dinner.
Day Three – Monday Breathtaking Switzerland is next – home to some of our favorite foods like fondue, raclette and yes, chocolate! An awe-inspiring assent onto Swiss mountain peaks via gondola delivers us to lunch on top of the mountain. Mid afternoon will find us at a cheese factory and tasting of yes – REAL Swiss cheese! In the afternoon we’ll drive onto Liechtenstein for dinner and wine.
Day Four – Tuesday Vaduz awaits us today, the capital (and home of the Prince of Liechtenstein). In the morning, a tour and wine tasting. Then, a free afternoon and evening, to explore this walkable and charming city packed with medieval, Gothic, and Baroque structures. (We have some great ideas for you!)
Day Five – Wednesday We’ll share an authentic fondue lunch today before heading to Colmar, Alsace, checking into the hotel, and you’ll be free to tour the captivating city and have dinner on the town with new friends.
Day Six – Thursday Enjoying and learning about Alsatian wine is our goal today. We’ll visit a small family owned winery, a European-focused medium-size winery, and then have a personal tour at Trimbach – the world renowned winery, along with a city and vineyard walk.
Day Seven – Friday Strasbourg, France is our destination this morning.Wine, beer and eau de vie will accompany our lunch of regional specialties. (Alsace is the main beer-producing region of France.) In the afternoon, we’ll depart for Oppenau in Germany’s Black Forest region. After arrival we’ll head to the kitchen for our hands-on cooking class with one of our favorite German chefs, *Stephan, who will lead us through the preparation of authentic local cuisine. Of course, our dinner, (that we’ve make ourselves, will be served up to us with a selection of Stephan’s favorite local wines.
*Ever heard of Sea Island, Georgia? That was Chef Stephan’s last Chef gig in states before returning to Germany.
Day Eight – Saturday Its an early departure for Stuttgart Airport for our return flights – but don’t worry we’ll have lots good coffee and a hearty breakfast waiting for you before we share a final toast and head for home.
