Guacamole Stuffed Eggs
- 6 Large Hard Boiled Eggs
- 1 Avocado
- 1 Garlic Clove, grated
- ½ tsp Hot Sauce like Sriracha OR Tabasco
- ½ tsp Lime Juice
- ½ tsp Sea Salt
- 1 Jalapeño Pepper, cut in half and sliced
- Smoked paprika for garnish.
Cut eggs in ½ lengthwise and put yolks in medium bowl. Cut avocado in ½ lengthwise, remove pit and scoop flesh with a spoon into bowl with yolks. Add garlic, hot sauce, lime juice and salt to bowl and mash together. Stuff eggs with mixture and top with jalapeño. Sprinkle with smoked paprika.
