Guacamole Stuffed Eggs

  • 6 Large Hard Boiled Eggs
  • 1 Avocado
  • 1 Garlic Clove, grated
  • ½ tsp Hot Sauce like Sriracha OR Tabasco
  • ½ tsp Lime Juice
  • ½ tsp Sea Salt
  • 1 Jalapeño Pepper, cut in half and sliced
  • Smoked paprika for garnish.

Cut eggs in ½ lengthwise and put yolks in medium bowl. Cut avocado in ½ lengthwise, remove pit and scoop flesh with a spoon into bowl with yolks. Add garlic, hot sauce, lime juice and salt to bowl and mash together. Stuff eggs with mixture and top with jalapeño. Sprinkle with smoked paprika.
