Grilled Vidalia, Corn, and Tomato Salad

  • 2 Bunches Lacinato Kale, Shredded Finely
  • ½  Cup Tofu
  • ½ Cup Extra Virgin Olive Oil
  • 2 Cloves Garlic, Grated
  • 3 TB Lemon Juice
  • 1 TB Rice Vinegar
  • 2 TB Dijon
  • 1 TB Capers
  • ¼ Tsp Each Sea Salt and Freshly Ground Black Pepper
  • *Sweet Potato Croutons

Place the Kale in a large bowl. Add the remaining ingredients to a food processor or blender and puree until smooth. Toss the kale with the dressing, starting with half and adding as desired. Sprinkle with *croutons.

Step One

Skewer the Vidalias with a wooden skewer. Spray with olive oil.

Step Two

Spray the corn with olive oil and place both on an oiled grill, grill pan or cast-iron skillet on a grill. Roast until grill marks appear, turning the corn and Vidalias as necessary to evenly cook the veggies.

Step Three

While the Vidalias and corn are roasting, halve or quarter the grape tomatoes, salt lightly and put in a colander to drain. Julienne the basil and mince the jalapeno. Place them in a large bowl.

Step Four

*In a 400F oven, place the prosciutto on a sheet tray and cook until crispy, remove and crumble.

Step Five

To make the dressing. add the oil, lemon juice, Italian seasoning, Dijon and honey to a jar and shake well. Season to taste with salt and pepper.

Step Six

When the corn and Vidalias have good grill marks, remove from the grill. Add to the bowl with the basil and jalapeño. Pat the tomatoes dry and add to the bowl. Toss with the dressing, starting with half and continue to add as desired. Place the salad on the lettuce and sprinkle with prosciutto and blue cheese.
