No. 1 : Quick Recipe
Sweet Potato Stacks
- 4 TB Unsalted Butter
- 4 TB Extra Virgin Olive Oil
- 2 Grated Garlic Cloves
- *6 Medium-size Sweet Potatoes, in 1/8” Slices
- 2 TB Chopped Fresh Thyme
- 2 TB Chopped Fresh Rosemary
- ½ Cup Grated Parmesan
- ½ Cup Grated Aged Gouda
- Sea Salt and Freshly Ground Pepper
- Flaky Sea Salt (like Maldon) and Finely Chopped Parsley for Garnish
Step One
Preheat the oven to 400F, lightly oil a 12-cup muffin tin.
Step Two
In a small pan, melt the butter and oil. Add the garlic and cook and stir until fragrant.
Step Three
In a large bowl, carefully toss together the potatoes, garlic butter, thyme, rosemary, parm and gouda with a good sprinkle of salt and pepper. Layer the potatoes evenly in the muffin tins all the way to the top of each hole, at least ½” higher. (The potatoes will shrink down, so don’t worry if they are a little higher than the tin.)
Step Four
Cover the muffin tin with foil and put on a baking sheet. Roast for about 30 minutes. Remove the foil and bake for another 10 -15 minutes or until they are tender, browned and caramelized around the edges. Serve sprinkled with flaky salt and parsley.
No. 2 : Kitchen Scoop
*We used a handheld mandolin like this one from Kyocera. I think this little tool is a super way of making thin slices easily – its inexpensive and easy to use. But if you don’t have a mandolin, just cut your potatoes very thinly and the stacks will still be very very good. By the way, I did not peel the potatoes, but left the skin on them. Your choice – peel or not!

I picked the garnish for these stacks intentionally. I love the crunchy hit of the salt flakes and the color and fresh flavor the parsley brings to the potatoes.
