Spring Strawberry Salad with Strawberry Balsamic Dressing

  • 1 Clamshell Arugula or Baby Greens
  • Sea Salt and Freshly Ground Black Pepper
  • 1 Pint Strawberries, stems removed and sliced
  • ½ Cup Roasted Pecans
  • ½ Cup Crumbled Feta
  • Strawberry Balsamic Dressing

Place the greens in a salad bowl and season with salt and pepper. Add the strawberries, pecans and crumbled feta cheese. Drizzle with dressing and serve. 

Strawberry Balsamic Dressing

  • ½ Pint Strawberries, stems removed and coarsely chopped
  • 2 TB Extra Virgin Olive Oil
  •  2 TB Balsamic Vinegar
  • 1 TB Dijon
  • 1 TB Honey
  • Sea Salt and Freshly Ground Black Pepper to taste.

Add all the ingredients to a blender and puree until smooth.
