Spring Strawberry Salad with Strawberry Balsamic Dressing
- 1 Clamshell Arugula or Baby Greens
- Sea Salt and Freshly Ground Black Pepper
- 1 Pint Strawberries, stems removed and sliced
- ½ Cup Roasted Pecans
- ½ Cup Crumbled Feta
- Strawberry Balsamic Dressing
Place the greens in a salad bowl and season with salt and pepper. Add the strawberries, pecans and crumbled feta cheese. Drizzle with dressing and serve.
Strawberry Balsamic Dressing
- ½ Pint Strawberries, stems removed and coarsely chopped
- 2 TB Extra Virgin Olive Oil
- 2 TB Balsamic Vinegar
- 1 TB Dijon
- 1 TB Honey
- Sea Salt and Freshly Ground Black Pepper to taste.
Add all the ingredients to a blender and puree until smooth.
