No. 1 : Quick Recipe
Fresh, Herby Asparagus and Farro Salad
- 1 Cup Farro
- 1 LB (about1 Bunch) Thin Asparagus, sliced into 2” pieces
- Sea Salt and Freshly Ground Pepper
- 5 TB Extra Virgin Olive Oil, divided
- 1/2 Cup Finely Chopped Fresh Herbs, your choice
- 1 – 2 TB Lemon Juice
- Arugula or Spring Greens
- Chopped Grape Tomatoes and additional chopped herbs for Garnish
Step One
Preheat the oven to 425F. Cook the farro according to package directions. Drain and transfer to a medium bowl. While the farro is cooking, place the asparagus on a sheet pan, season with salt and pepper, and toss with 2 TB of the olive oil – slide into the oven. Roast until browned around the edges and crisp tender. This should take about 10 – 12 minutes.
Step Two
Stir the beans into the farro, along with the herbs, remaining oil, 1 TB lemon juice, a good sprinkle of salt and grind of pepper. Season to taste as desired. (You may want a little more lemon juice.) Serve on a bed of greens, garnished with tomatoes and more chopped herbs if desired.

This is an easy, beautiful and delicious salad that you can make to use up some of the stray herbs in your crisper drawer, and left overs are incredibly good the next day. Mix up your grains, (quinoa? brown rice?) to change it up – add some avocado or a few kalamata olives if you’d like to do so.

Not a fan of asparagus? Make the salad with roasted green beans instead – Yummy!

Although many Marlborough Sauvignon Blanc wines would go well with this salad – I’m sharing one of my favorites.(Its a little more expensive that others, but its worth it!) The wine brings a bright pop of flavor to the pairing, and its acidity slices through the richness of the nutty farro while amping up the green vegetal flavor of the asparagus. When you taste the wine, you’ll discover zesty citrus and tropical fruit notes with a crisp, mouthwatering, and intensely refreshing finish. What a lovely quaffer for a spring inspired salad!
