No. 1 : Quick Recipe

Christmas Cake

  • 7 TB Whole Wheat Pastry Flour or All Purpose Flour
  • 7 TB Raw Sugar
  • 2 Large Eggs
  • 2 Large Egg Whites
  • 1⁄2 Tsp EACH Cinnamon, Nutmeg and *Cardamom
  • 1/8 tsp Ground Cloves
  • 1/8 Tsp Sea Salt
  • 1 1⁄2 Cups Chopped Dried Fruit like Raisins, Dates, Apricots, etc. plus more for garnish
  • 1 1⁄2 Cups Toasted Chopped Nuts
  • 1 TB Honey for Garnish
  • Whipped Cream for Garnish

Step One

Preheat the oven to 300F. Oil or spray and line a 8 or 9 inch round pan with parchment paper.

Step Two

Whisk together the flour, sugar, eggs, cinnamon, nutmeg, cardamom, cloves and salt together in a large bowl. Stir in the dried fruits and nuts. Scrape the mixture into the pan and bake for 80 – 90 minutes. Let cool and remove the cake from the pan. Serve drizzled with honey, a dollop of whipped cream or yogurt and dried fruit.

*Did you know that cardamom is an expensive spice, second in price only to saffron? One of the oldest spices, I love that ancient Egyptians used it as a tooth cleaner – it would certainly have made their breath fragrant too! When you buy ground cardamom, you are buying the ground seeds from inside a funny-looking green colored dried-up pod.

No. 3 : Clever

This recipe is easily doubled, and when I make this cake, I often serve one cake right away, and then freeze the other. Its great to be able to pull it out when I don’t have tome to make another dessert, or I love having it for breakfast when I have overnight guests.
