Lots of laughs today on Facebook Live and Drink Wine Get Organized – Summer is time for kicking back, relaxing – and MOVING. Carrie from Neatsmart shared some awesome moving tips, and I demoed cookies and wine!

Sometimes you just have to have something to eat that’s easy, portable and delicious. I’m thinking breakfast, snacks, lunch on the go. Combo one of these cookies with a piece of fruit and you’re talking yummy. They’ll keep in the fridge all week, and they freeze great!

These cookies don’t need a mixer, have no sugar – just maple syrup and use oil instead of butter – perfect to make with the kiddos this summer!

Carrot Cake Cookies

About 24 – 20 Large Cookies
(Recipe can be halved or doubled)

  • 1 Cup Whole Wheat Flour
  • 1 Cup Rolled Oats
  • 1 Tsp Baking Powder
  • ½ Tsp Ground Nutmeg
  • ½ Tsp Cinnamon
  • ¼ Tsp Ground Cloves
  • ¼ Tsp Fine Sea Salt
  • 2 Medium Carrots, shredded (about 2/3 Cup)
  • ½ Cup Unsweetened Coconut Flakes
  • ½ Cup Maple Syrup
  • ½ Cup Avocado or Canola Oil
  • 2 Large Eggs
  • 4 Large Egg Whites
  • ½ Cup Chopped Walnuts
  • ½ Cup Raisins

Step One

Line two baking sheets with parchment. Whisk the flour, oats, baking powder, nutmeg, cinnamon, cloves and sea salt together in large bowl. Add in the carrots and mix and then the unsweetened coconut.

Step Two

In a second smaller bowl, add the maple syrup, oil, eggs, whites, walnuts and raisins and mix well. Add the second bowl to the first bowl and cover with plastic wrap. Place in the fridge for 30 minutes. Set the oven to 350F.

Step Three

Remove the cookie dough from the fridge and drop 2-3 TB of the dough on the prepared baking sheets. Slide into the oven and cook for about 12 – 14 minutes. Remove from the oven and let cool completely before storing. (or eating!)

Wine? Underwood Rosé Bubbles

I’ve been getting lots of questions about canned wine – so I thought DWGO would be a fun place to address them. Canned wine is a SUPER solution to picnics, park visits, concerts and the pool. The number one question I get is, “Doesn’t the wine taste metallic?” Nope, the can is made with a special liner so you won’t taste the can – only the wine. This wine is from the Oregon winery, Underwood. (They make bottles, too!) Its the perfect pair with these carrot cake cookies, cause the cookies are just lightly sweet – and the wine is super fruit forward. This bubbly tastes like berry juice with fizz. Can’t get much better for a summer quaffer. I found it at Whole Foods for $6.99.

This wine is very bubbly and made from mostly Pinot Noir. Fun and frolicky for casual summertime drinking.
