Its Peach Season! So, let’s celebrate the season by adding them to a salad that we love as much as the Italians do —the juicy sweetness of fresh peaches pairs perfectly with the bright, tangy tomatoes and the creamy goodness of fresh mozzarella. When we add a handful of basil and a drizzle of olive oil and balsamic, we’ve got one of summer’s best flavor combinations, all on one beautiful platter.

Italy is one of Europe’s largest peach producers, and summer markets are filled with both yellow and white peaches. This abundance is one reason peach salads, desserts, and preserves are so popular during the warmer months.

How many verities of peaches are there?
Over 2,000 varieties of peaches worldwide, with more than 300 types grown in the United States!
What’s a “cling” peach?
That refers to how the flesh clings to the peach -there are clingstone and freestone peaches.

Italian Peach Caprese Salad
4 Slices Prosciutto
8 OZ or 1 Small Tetra Pak Arugula or Spring Mix
4 Large Peaches, pitted and sliced
2 Large Heirloom or “Slicers” Tomatoes, sliced
6 OZ Mozzarella, Sliced
Leaves from 1 Bunch Basil
Sea Salt and Freshly Ground Pepper
¼ Cup “store-bought” Balsamic Glaze
¼ Cup Good Olive Oil

Step One
Place the Prosciutto on a sheet tray and slide into a preheated 400F oven. Set your timer for 3 minutes. When your timer goes off, remove the tray from the oven and flip the prosciutto over. Set the timer for 3 more minutes. When your timer goes off, check on the prosciutto – if it looks a little darker in color and has shrunk in size, its done. If not place it back in the oven for a minute or two. Be careful! It burns easily. Set aside until cool.

Step Two
Make a “bed” for your salad with the arugula on a large platter. Alternate the peach slices, tomato slices, mozzarella slices and basil on the platter. Season with a sprinkle of salt and freshly ground black pepper. Then, drizzle with the glaze and the olive oil. Crumble the crisped prosciutto over the top and serve.
