Acqua Pazza (White Fish in Tomato Broth)

  • ¼ Cup Extra Virgin Olive Oil
  • 1 Bulb Fennel, Thinly Sliced, Fronds reserved
  • Sea Salt and Freshly Ground Pepper
  • 3/4 Cup Chopped Parsley, divided
  • 1 Tsp Dried Red Chili Flakes
  • 4 Cloves Garlic, grated
  • 1 LB Grape Tomatoes, halved
  • 1+ Cup Dry White Wine (like the Grillo I talked about below)
  • 1 Cup Water
  • 2 LB White Fish in Fillets or Pieces, like cod, flounder, haddock or other
  • 3 Cups Cooked Farro
  • Lemon Wedges

Step One In a large sauté pan, heat 2 TB of olive oil, season the fennel with salt and pepper and cook until soft about 7 – 8 minutes. Add ¼ Cup parsley, chili flakes and garlic. Cook and stir until aromatic. Add the tomatoes and cook over medium heat until the tomatoes have collapsed.

Step Two To create a broth, add the wine and water, heat to a simmer and then add the fish. (*Add additional wine or water as desired.) Cook until the fish is opaque and flakes easily. Taste and adjust the seasoning. Add the farro to 4 to 6 bowls. Plate the fish and the broth on top. Sprinkle with parsley and add a lemon wedge to serve.

*This recipe is often served up a little “brothy” because of the wine and water used. You can make yours as soupy or dry as you choose!

No. 3 : Clever Idea

Acqua Pazza was invented by fishermen who cooked the catch of the day directly on the boat with simple and handy ingredients and used seawater to substitute for more expensive salt. This recipe is simple: poached white fish in a cherry tomato broth, and the wine should not overpower it. Tomatoes are acidic, so a fresh, crisp and dry white wine will make the recipe shine.
