30 Minute Beef Stew
- 2 LBs Sirloin Steak, cut in1” cubes
- ¼ Cup Whole Wheat Flour
- Sea Salt and Freshly Ground Pepper
- 2 TB Avocado Oil
- 1 TB Smoked Paprika
- 1 Tsp Garlic Powder
- 1 Tsp Onion Powder
- 3 Cups Beef Stock
- 1 (15 OZ) Can Fire Roasted Crushed Tomatoes
- About 6 Cups Frozen Vegetables – your choice (carrots, potatoes, beans, corn, etc)
- Fresh Parsley, Basil or Dill
Step One
Place the steak in a bag. Sprinkle the flour and a good shake of salt and pepper to the bag. Shake to coat the steak well. Heat 1 TB of the oil in large skillet or Dutch oven on medium-high heat. Add half of the beef; brown on all sides, then repeat with the rest of the beef. Set aside.
Step Two
Add the beef stock to the skillet add the vegetables and paprika, garlic and onion powder; bring to boil. Lower the heat, add the seared beef and and simmer 15 minutes or until vegetables are tenStir through the herbs and serve.
