How about an easy, light and creamy green way to celebrate spring weather? Top any salad with this yumminess – or use it for dipping crunchy fresh veggies like we have done in the photo above.
Cilantro brings a bright flavor color and lots of nutrition, too! Coriander/Cilantro is a wonderful source of dietary fiber, manganese, iron and magnesium as well. In addition, cilantro leaves are rich in Vitamin C, Vitamin K and protein. They also contain small amounts of calcium, phosphorous, potassium, thiamin, niacin and carotene.
We’re also using the dried and powdered spice from cilantro – coriander. Coriander is a lightly citrus flavored spice. So in this easy recipe we are layering on the flavor and nutrition by using both the fresh and dried spice. That means Cilantro = Nutrition + Flavor!
Spring Creamy Cilantro Lime Avocado Dressing or Dip
- 1 Cup Green Onions
- 2 Cups Cilantro, coarsely chopped
- 1 Garlic Clove
- ¼ Cup Lime Juice
- 1 TB Honey
- ½ Tsp Ground Coriander
- ½ Tsp Each Sea Salt and Freshly Ground Pepper
- ¼ to ½ Cup Extra Virgin Olive Oil
- 1 Small Avocado, peeled and pitted, chopped coarsely
Add the cilantro through the salt and pepper to a food processor and puree. Add the avocado and then drizzle in the olive oil. Taste for salt and pepper and season as desired.
