Smoky Potato and Artichoke Salad
- 3 LBS Cooked Red or Yellow Potatoes cut into 1” Chunks
- 3 Cups Artichoke Hearts, defrosted if frozen, packed in water if canned
- 1 Cup Thinly Sliced Roasted Red Peppers
- *Smoked Paprika Dressing*
- ½ Cup Chopped Cilantro
Toss the potatoes, (drained artichokes) and red peppers together in a large bowl. Drizzle with the smoked paprika dressing and garnish with chopped cilantro.
*Smoked Paprika Dressing
- 2 Garlic Cloves, peeled
- ¼ Cup Olive Oil Mayonnaise
- 2 TB Dijon Mustard
- 2 TB Red Wine Vinegar
- 2 TB Lemon Juice
- ¼ Cup Extra Virgin Olive Oil
- 2 TB Smoked Paprika
- 1 Tsp Turmeric
- Sea Salt and Freshly Cracked Black Pepper to Taste
Place all ingredients in the food processor and puree.
