When we think about St Patrick’s Day, we think potatoes! Here’s fun way to make potatoes into an awesome salad – that’s definitely NOT the usual recipe.
Dill is a good source of vitamin C, magnesium, and vitamin A. It also may have several benefits for health, including protection against heart disease and cancer. However, it’s important to keep in mind that most studies looking at the benefits of dill use dill extracts. Still, a compound in dill has anti-inflammatory and detoxifying properties. Also, it packs a big flavor punch that lends a distinctively fresh and grassy taste to any meal. The potato salad also has good probiotics for your gut from the kefir which is a win – win for your health!
Irish Inspired Potato Salad
- 2 LBs Baby or Fingerling Potatoes, halved or quartered
- 1 Cup Plain Kefir
- ¼ Cup Chopped Dill, plus more for garnish
- 1-2 Tsp Lemon Juice
- Sea Salt and Freshly Ground Pepper to Taste
- ½ Cup Minced Red Onion
- 1 Cup Minced Celery
- ½ Cup Chopped Green Olives
Cook the potatoes in salted boiling water. While the potatoes are cooking, add the kefir, dill and 1 Tsp lemon juice to the bottom of a large bowl. Whisk and taste to see if you need another Tsp of lemon juice, and season with salt and pepper. To the same bowl, add the warm potatoes when they are done. Add the onion, celery and green olives. Let sit for at least 1 hour before serving, and serve garnished with dill.
You can find Kefir in the regular grocery store – right next to the yogurt. (If you can’t find kefir you can use yogurt.) Kefir is a fermented milk drink, similar to yogurt but a little more sour and thinner in body.
