Just because Valentine’s was last week doesn’t mean you can’t have chocolate – Happy Chocolate Month! Toast to the rich taste of these yummy truffles with a glass of Rosa Regale from Banfi. The Brachetto d’Acqui grape is the perfect partner to chocolate.
Deep Dark Truffles with a Surprise Ingredient
Three things to remember when making this recipe:
- Make sure to use 70% or higher chocolate
- Shake up your toppings
- Keep them in the fridge in a sealed container to keep them fresh
- 6 OZ 70% + Dark Chocolate, broken into pieces
- 1 TB Coconut Oil, melted
- 1 Ripe Avocado
- 2 TB Cocoa Powder
- 1 Tsp Vanilla Extract
- 1 TB Maple Syrup or Honey
Melt the chocolate and the coconut oil together in the microwave or in a pan on a low heat setting. Put the avocado, melted chocolate mixture, cocoa powder, vanilla and syrup or honey together in a food processor and puree til smooth. Scrape into a small bowl and place in the fridge at least 1 hour to firm up. When chilled, scoop with a spoon and using plastic gloved hands, roll into balls. Roll in your favorite toppings.
