Cranberry and Orange Salad with Goat Cheese and Pecans
- ½ Small Red Onion, very thinly sliced
- ¼ Cup Red Wine Vinegar
- 1 TB Dijon Mustard
- 1 TB Pomegranate Molasses
- 1 TB Lemon Juice
- 1/2 Tsp Chopped Thyme
- ¾ Cup Extra Virgin Olive Oil
- 2 (5 OZ) Bags Baby Greens
- 4 Oranges, peeled and cut into half moons
- 1 Cup Dried Cranberries
- 4 Oranges, peeled and cut into half moons
- 1 Cups Toasted Pecans
- ½ Cup Crumbled Goat Cheese
Step One
Add the onion to a small bowl of ice water, let it sit for 10 minutes or so while you prep the rest of the salad. To make the dressing, shake the vinegar, mustard, lemon juice, thyme and oil in a jar.
Step Two
Remove the onion from the bowl and pat dry. Layer the greens, then oranges. cranberries, onion, cheese and pecans on a large platter. Drizzle dressing over all.
