It’s Fall y’all! Time to enjoy the seasonal fruits and veggies rolling into the market! We looked through the market and found the most beautiful greens, including baby kale, baby romaine and arugula. We tossed in some gorgeous red grapes and lower sugar dried cranberries, plus toasted pecans that we chopped coarsely. All a colorful bed for a pumpkin dressing!
The pumpkin dressing is fun to make, and have your guests guess the secret ingredient! Although we don’t have a lot of cans in the healthy kitchen, pumpkin is one of them! We love pumpkin because of the fiber, potassium, and Vitamin C it contains. All support a healthy immune system which everyone needs as we head into the cold months.
Speaking of foods that support the immune system, we are using the fresh herb thyme in the salad today. Thyme is a culinary herb with medicinal properties. It is known for its anti-inflammatory benefits. It also can possibly help with sore throats because of its strong anti-microbial properties.
Make the salad with red or green leaf lettuce, coarsely chopped toasted pecans and halved red grapes. Serve up a jar of pumpkin dressing and allow everyone to dress their own salad.
Pumpkin Salad Dressing
- ¼ Cup Pumpkin Puree
- ¼ Cup Apple Cider Vinegar
- 2 TB Maple Syrup
- 1 tsp Dijon
- 1 Clove Garlic, grated
- ½ tsp Sea Salt
- ¼ tsp Freshly Ground Black Pepper
- ½ Cup Extra Virgin Olive Oil
- 1 tsp Fresh Thyme Leaves
Add all the ingredients to a jar and shake well.
