The flavors of creamy rich yogurt, bright lemon and garlic always make us think of the Mediterranean. This dip does too! We use it here for veggies, but it also is an awesome sauce with roasted or grilled fish or chicken. The dip is super easy to make, you’ll just do a little chopping before you stir it up. Don’t fret if you don’t have all the herbs in the salad – if you have 2 TB of Chopped Cilantro, you can use it in place of the basil, and vice versa. Parsley also makes a good substitute for either herb
Chives are one of the herbs we use in the dip, to create a little “oniony” flavor without an onion “punch”. Chives also add nutrition to this recipe as well. They contain not only vitamins and minerals such as vitamin C and calcium, but also other antioxidants that can help fight cancer. One phytochemical in particular is quercetin. Quercetin can help with low grade, chronic inflammation. Chives also contain a host of other nutrients important for a healthy diet. This includes potassium, iron and calcium, vitamins A and C, folate, niacin, riboflavin and thiamin.
Mediterranean Lemon Herb Dip
- 2 Cups PlainGreek Yogurt
- 2 TB Fresh Lemon Juice
- 1 TB Lemon Zest
- 1 Garlic Clove Grated
- 1 TB Chopped Chives
- 1 TB Chopped Cilantro
- 1 TB Chopped Basil
- 1 Tsp Sea Salt
- Extra Virgin Olive Oil
Mix all the ingredients except for the olive oil together in a bowl. Drizzle with oil and serve with fresh veggies for dipping.
