If you’re getting ready for a fun 4th weekend, like we are, we’ve got the perfect appetizer! You may think that watermelon is just a juicy sweet dessert – but this savory, spicy skewer will change your mind! The hoisin along with the zesty lime and crunchy nuts compliment the sugary moist melon.

Mint amps up the zing of the dressing along with cilantro! Mint is a calming and soothing herb that has been used for thousands of years to aid with upset stomach or indigestion. Mint is thought to increase bile secretion and encourage bile flow, which helps to speed and ease digestion. Cilantro has its own set of health benefits. It is very low in saturated fat and cholesterol, and the caloric value is nearly nonexistent. It is a good source of dietary fiber, vitamins A, C, E, K, calcium, iron, potassium, and magnesium. Cilantro is considered the “anti-diabetic” plant in some parts of Europe, and research shows that it helps to lower cholesterol, lower blood pressure, and supports healthy cardiovascular function.

Melon Skewers with Asian Lime Dressing and Pistachios

  • 6 – 10 Cups Watermelon in Cubes
  • 20-24 Bamboo Skewers
  • 2 TB Lime Juice, Plus the Zest of 1 Lime
  • 3 TB Hoisin Sauce
  • Freshly Ground Black Pepper to taste
  • 3 TB Chopped Fresh Cilantro
  • 2 TB Chopped Fresh Mint
  • ½ Cup Chopped Pistachios

Place the melon on skewers. Whisk the lime juice, zest and hoisin sauce together in a small bowl to blend. Drizzle the dressing over melon skewers. Season to taste with pepper. Sprinkle with cilantro, mint and pistachios. Serve it up to your fun family or friends!
