Happy Cinco de Mayo! You just can’t celebrate without tacos. Here’s a riff on everyone’s favorite fish taco – but without frying the fish. Plus, is packed full of good-for-you broccoli slaw and one of our favorite spices – smoked paprika!
We love smoked paprika because it is rich in several vitamins, minerals, and antioxidants. In particular,1 tablespoon has 19% of your daily needs for vitamin A. Smoked paprika may also boost eye health with its vitamin E, beta carotene, lutein, and zeaxanthin.
Fabulous Fish Tacos
- 1-2 LBs White Fish, (like cod, halibut, etc.) cut in Strips
- ¼ Cup Panko Bread Crumbs
- 2 TB Cornmeal
- 1 Tsp Smoked Paprika
- 1 Bag Broccoli Slaw
- 10 – 12 Corn Tortillas, Warm
- 1 Recipe Taco Sauce
- Lime and Avocado for Garnish
Step One Preheat the oven to 350F. Bread the fish by placing the panko, cornmeal and paprika in a plastic zip bag. Add the fish slices a few at a time and shake to coat well. Place the slices on a parchment lined sheet tray and cook for 5 – 8 minutes or until the fish is flaky and white.
Step Two Place the slaw and a few slices of fish in each taco, garnish as desired with lime and avocado. Top with a healthy dollop of sauce.
Taco Sauce for Fabulous Fish
- ¼ Cup Olive Oil or Avocado Mayonnaise
- ¼ Cup Nonfat Greek Yogurt
- 1 TB Lime Juice
- 2 TB Chopped Pickled Jalapenos
- 1 TB Chopped Cilantro
- Sea Salt and Pepper to Taste
Place the ingredients in a bowl and stir to combine.
