February is the season of soup! We love making it from scratch – especially when its an EASY recipe like this one, full of the richness of tomatoes and peppers.

We use Italian Seasoning to add flavor to the soup – a delicious Mediterranean blend of herbs and spices that is easy to find and perks up the flavor any tomato dish.

Italian Seasoning is a blend typically consisting of oregano, basil, thyme, and rosemary. Each one brings their have their own anti-inflammatory and anti-bacterial health benefits. Since its a mix of herbs, you won’t get a large amount of any ofone benefit – but you can still add a pop of flavor and gain small amounts of healthy flavor.

*Five Ingredient Tomato Soup

  • 2 TB Avocado Oil
  • 3 Cups Chopped Red Onion
  • 2 TB Italian Seasoning
  • 1 Jar Roasted Red Peppers, chopped (we like Marzetti Roasted Red Pepper Strips
  • 2 (29 OZ) Large Cans Fire Roasted Crushed Tomatoes (We like Muir Glen)
  • 2 Cups Water
  • Sea Salt and Freshly Ground Pepper to Taste

Heat the oil over medium heat. Add the Onion and Italian Seasoning, and as sprinkle of salt and pepper. Sauté the onions slowly until soft, about 8 to 10 minutes. Add the peppers, tomatoes and water. Cook and stir for 30 minutes. Remove from the heat, season to taste with salt and pepper. Let cool slightly and then use your immersion blender to puree the soup.

*When counting ingredients in recipes, we don’t count salt and pepper or water, because everyone has those three in their kitchen!
