Who doesn’t love chocolate chip cookie dough? We know its not good for us, but oh! It does taste good. During this Valentine’s week, it seems many want to shower their valentine with a sweet treat…but let’s do it in a healthier way. Pay special attention to the dark chocolate in this recipe. Try and choose 60% or higher cocoa bean to reap the powerful health benefits. Dark chocolate is rich in minerals, such as iron, magnesium, and zinc. The cocoa contains antioxidants called flavonoids, which may provide many health benefits. And make sure the food label does not say “dutch processed or processed with alkali” because that processing strips the health benefits from the dark chocolate.
So here’s a way to enjoy the chocolate flavors, and eat a little better for us on Valentines! The highlighted herb this week is MINT……it is used to make the chocolate pop! Mint is a popular herb that people can use fresh or dried in many dishes and infusions. We used fresh chopped mint which offers a range of antioxidant qualities and potential health benefits. Many people who have digestion problems find relief when consuming fresh mint. It is also very helpful with any kind of nausea, asthma, and upset stomach. Crazy Good Chocolate Chunk Cookies Dip
- ¾ Cup Cannellini Beans, rinsed and drained
- 2 – 3 TB Unsweetened Plain or Vanilla Almond Milk
- ¼ Cup Coconut Sugar
- 1 Tsp Vanilla
- 2 TB Almond Butter
- Pinch of Sea Salt
- ¼ Cup (at least 70%) Chunked Dark Chocolate
- Chopped Mint for Garnish if desired
- Sliced Apples
Add all the beans, milk, sugar, vanilla and salt ingredients to a blender and puree until smooth and creamy. Stir in the chocolate. Place in a bowl and chill for at least an hour until the flavors have melded. Garnish with mint as desired. Serve with apple slices.
