Composed Salad

On a large platter, Layer these ingredients:

  • Romaine Lettuce
  • Summer Corn, cooked and cut off the cob
  • Chopped Kalamata Olives
  • Sliced Radishs
  • Halved Grape Tomatoes
  • Crumbled Feta Cheese
  • Chopped Avocado
  • Toasted Pumpkin Seeds

Top with:

Simple Vinaigrette

  • ¼ Cup Extra Virgin Olive Oil
  • 2-3 TB Balsamic Vinegar (or any vinegar or lemon juice)
  • 1 tsp Dijon Mustard
  • ½ tsp Honey (optional)
  • Sea Salt and Freshly Ground Black Pepper to taste

Shake all ingredients together in small jar.

Best Ever Guacamole

  • 4 Ripe Haas Avocados
  • 1 TB Minced Red Onion
  • 1 Jalapeno, Minced
  • 1/4 Cup Chopped Cilantro
  • 1 TB Lime Juice
  • Sea Salt to Taste
  • ½ Cup Grated Cheddar Cheese and Chopped Tomatoes for Garnish

Half and pit the avocados and mash with the onion, jalapeño and cilantro. Salt to taste and spread on a large platter. Sprinkle with the cheese and tomatoes.
