Composed Salad
On a large platter, Layer these ingredients:
- Romaine Lettuce
- Summer Corn, cooked and cut off the cob
- Chopped Kalamata Olives
- Sliced Radishs
- Halved Grape Tomatoes
- Crumbled Feta Cheese
- Chopped Avocado
- Toasted Pumpkin Seeds
Top with:
Simple Vinaigrette
- ¼ Cup Extra Virgin Olive Oil
- 2-3 TB Balsamic Vinegar (or any vinegar or lemon juice)
- 1 tsp Dijon Mustard
- ½ tsp Honey (optional)
- Sea Salt and Freshly Ground Black Pepper to taste
Shake all ingredients together in small jar.
Best Ever Guacamole
- 4 Ripe Haas Avocados
- 1 TB Minced Red Onion
- 1 Jalapeno, Minced
- 1/4 Cup Chopped Cilantro
- 1 TB Lime Juice
- Sea Salt to Taste
- ½ Cup Grated Cheddar Cheese and Chopped Tomatoes for Garnish
Half and pit the avocados and mash with the onion, jalapeño and cilantro. Salt to taste and spread on a large platter. Sprinkle with the cheese and tomatoes.
