Silky Smooth Sweet Potatoes with Five Spice Cashews

  • 3 LBs Sweet Potatoes
  • ½ Tsp EACH Sea Salt and Freshly Ground Black Pepper
  • 1 Cup Coconut Milk
  • 2 tsp Lemon Juice

Step One

Adjust oven rack to upper-middle position; heat to 425 degrees. Place potatoes on a foil-lined pan; bake 45 to 60 minutes, until tender. Peel when cool enough to handle.

Step Two

Puree the sweet potatoes with coconut milk, salt and pepper in a food processor or with an immersion blender. Add lemon juice. Sprinkle with chopped five spice cashews.

Five Spice Cashews

  • 1 Cup Raw Cashews
  • 1 Tsp Extra Virgin Olive Oil
  • 1/2 Tsp Chinese Five Spice Powder
  • 1/2 Tsp Sea Salt

Spread the cashews out on a sheet pan and place in a 400F oven for 5 – 7 minutes or until golden. Remove from the oven and spray or toss with oil and sprinkle with five spice and salt.
