Whether its Passover or Easter – this weekend is a holiday worth celebrating! This week’s Spicy Tuesday is a yummy dip or pasta sauce that is super delicious and easy to make and share with friends and family!

Basil makes this sauce irresistible and spicy! It brings not only lots of flavor – but nutrition, too! It is a part of the mint family and has anti-inflammatory qualities. Basil also is a potent antibacterial. The herb is so healthy because it has just 22 calories per serving and has no fat, sugar, or sodium….all of which we should be limiting as we jump into spring!

Sundried Tomato Pesto with Oodles of Zoodles

  • 6 Whole Sun Dried Tomatoes (12 halves)
  • 1 Pkg Fresh Basil, Leaves Only
  • 1 Cup Grated Parmesan
  • 3 TB Balsamic Vinegar
  • ¼ – ½ Cup Extra Virgin Olive Oil
  • 2 Tsp Sea Salt, plus more to taste
  • 1 Tsp Freshly Ground Black Pepper

Combine the sundried tomatoes, vinegar, olive oil, garlic, salt and pepper in a food processor and pulse until smooth.
