Happy (Healthy) Holiday Breakfast!

It’s the HOLIDAYS! The family is descending on you…what are you going to serve the hungry hoards for breakfast? Don’t resort to doughnuts and grocery store pastry – instead have them enjoy a breakfast buffet full of delicious goodies. You don’t even have to tell them its better-for-them!

Breakfast Salad

  • 3 Cups Pitted Fresh or Frozen Cherries, halved
  • 3 Cups Fresh Berries
  • 6 Cups Baby Greens
  • 1 Cup Dried Cranberries or Blueberries
  • ½ Cup Grapenuts, Toasted (in a 350F oven, for about 6-7 minutes)
  • ½ Cup Walnuts, Toasted and Chopped
    OJ Salad Dressing*

Arrange the Cherries and oranges on top of the baby greens, which have been spread out on a platter. Sprinkle with the Grapenuts and Walnuts and drizzle with the dressing.

OJ Salad Dressing

  • 3 TB Blackberry or Blueberry Jam
  • ¼ Cup Fresh Lemon Juice
  • 1/3 Cup Extra Virgin Olive Oil

Shake the ingredients together in a jar and pour over salad.

Perfect Pancakes

  • 1 Cup Canned Cannellini Beans, Drained and Rinsed Well
  • 1/2 Cup Regular Rolled Oats
  • 1 Large Egg
  • 2 Egg Whites
  • 1/3 Cup Honey
  • 1/2 Cup Skim or Unsweetened Almond Milk
  • 1/2 Cup Whole Wheat Flour
  • 1 1/2 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • 1/4 Tsp Sea Salt

Step One

In a blender or food processor, combine the oatmeal and beans. Process until combined. Add the eggs, honey and milk and process again until well blended.

Step Two

In another bowl, toss together the flour, baking powder, baking soda and salt. Add the bean mixture and stir with a fork until just blended – a few lumps are fine.

Step Three

Preheat a non-stick griddle or skillet. Drop by 1/4 cup full onto pan preheated on medium high heat. Cook for about 2 minutes for the first side. It will be ready to flip when the edges are set, and bubbles appear. Turn and cook the second side for about 1 minute. When done, Perfect Pancakes may be “browner’ in color than other pancakes.

Ginger Spiced Granola

Just a little crystallized ginger provides a lot of flavor for this better-for-you granola. It adds zing and nutrition, too. Ginger is commonly used for motion sickness or an upset stomach. In fact there is one study in particular that proved that ginger was far superior to Dramamine for motion sickness! 

  • 3 Cups Oats
  • ¼ Cup Uncooked Millet or Sunflower Seeds
  • ¼ Cup Sesame Seeds
  • ¼ Cup Chopped Walnuts
  • ¼ Cup Chopped Almonds
  • 1 ½ tsp Cinnamon
  • ¼ tsp EACH Mace and Cardamom

  • ¼ Cup Maple Syrup
  • ¼ Cup Orange Juice
  • 1 Orange, zested
  • ½ Cup Dried Fruit (your choice, chopped if large)
  • 2 TB Finely Chopped Crystallized Ginger

Step One

Preheat oven to 300F. In large bowl, combine all dry ingredients except dried fruit and ginger. Drizzle in maple syrup and stir well. Add orange juice and zest, stirring so all ingredients are coated.

Step Two

Spread mixture evenly onto sheet pan lined with parchment paper. Bake for about 30 minutes (checking about every 10 minutes) and stirring so nothing burns.

Step Three

Remove from oven and add dried fruit and ginger. Cool completely and store in airtight container.
