Levert Freres Cremant de Bourgogne Brut
about $18 from Total Wine
Cremant is the name given to wines made in the Champagne method in France, but not from the Champagne region. This one is from Burgundy, (Bourgogne), and made with the Chardonnay grape. Its bubbly, toasty-tasting and full of the flavors of tropical fruit.
Transitioning to Fall Organizing Tip ONE
In your closet move lighter colored and weight clothing to the back and bring forward darker, heavier clothing. In the South, we could still have high temps but we’re probably done with super light-weight clothes and scrappy sandals. Bring back your scarves, boots, and jackets. It’s all about layers now!
Handmade Pita Chips
- 6 Whole Wheat Pita Pockets
- Olive Oil Spray
- Sea Salt and Freshly Ground Black Pepper
Cut the Pita Pockets in fourths and the tear each quarter in half – you should have 8 pita chips from each pocket. Spray them and then salt and pepper them well. Place on a sheet pan and cook in a 400F oven for a about 10 – 15 minutes turning once.
Baileyana Firepeak Pinot Noir about $18 from Costco
The pumpkin dip needs a wine with jammy fruit forward flavors, like a California Pinot Noir. Baileyana’s vineyards are just 5.4 miles from the Pacific, making the climate perfect for growing Pinot Noir – sometimes called the heartbreak grape because it can be so difficult to grow. Ripe cherries, plums and spice are the hallmarks of this wine.
Transitioning to Fall Organizing Tip TWO
Wash all of your beach towels, cover-ups, and bathing suits. Dump out pool/ beach bag and throw away old sunscreen, wrinkled magazines, and crushed water bottles. It’s great to store towels in this bag once everything is clean. Don’t store swim suits in attic or near heat source since it will break down the elastic. Evaluate if you even need to keep all of the swimsuits if they are on their last legs or you didn’t wear them.
Pumpkin Hummus with Goat Cheese and Pumpkin Seeds
- 2 Cans (15 oz) Cannellini, well drained and rinsed
- 1 Cup Canned Pumpkin, (about 3/4 of a 15 OZ can.)
- 2 TB Lemon Juice
- 2 Garlic Cloves, grated
- 1 Tsp Sea Salt
- 1 Tsp Cumin
- ½ Tsp Allspice
- 1 Tsp Smoked Sweet Paprika
- 1 Cup Crumbled Goat Cheese
- ½ Cup Toasted Pumpkin Seeds
In a food processor puree all ingredients except the goat cheese and pumpkin seeds. Remove from the processor, spread on a plate and sprinkle with seeds and cheese.
Fernadez Gomez Rioja about $14 at Costco
White Garnacha
Divine paired with Roasted Radishes – a heavier white wine that’s perfect with roasted winter veggies, soups and stews. Still crisp and refreshing like summer whites, but brings a little more body to the table.
Transitioning to Fall Organizing Tip THREE
Now you can start to bring out fall scents and decor. Floral and beach-y scented candles can go in a closet (in a properly labeled shelf or bin 😉 ). It’s a good idea to have a place where you store holiday and seasonal decor. This can be a shelf, cabinet, or whole closet depending on how much you transition your home based on the seasons. Just make sure you keep all of your like items together.
Roasted Radish Toasts
- 4 Pieces Rustic Whole Wheat Bread
- 1 TB and 1 Tsp Extra Virgin Olive Oil, divided
- Sea Salt and Freshly Ground Black Pepper to taste
- 1 Bunch Radishes, halved or quartered
- 2 -3 Oz Goat Cheese, Softened
- 2 TB Chopped Fresh Parsley
Step One Spray or brush the toast with 1 Tsp of oil and sprinkle with salt and pepper. Broil, or place over a gas flame until very browned.
Step Two Toss the radishes with the remaining 1 TB of oil and sprinkle with salt and pepper. Place on a sheet tray and slide into a 425F oven for 15 – 20 minutes or until browned on the edges. While they are roasting, slather a couple of tablespoons of cheese on the toast. Remove from the oven and top the bread with the radishes, sprinkle with the parsley and serve. (Serve it up as a salt as well, by putting the radishes on a bed of greens with a sprinkle of toasted walnuts. Drizzle with balsamic vinegar and extra virgin olive oil.)
