As we wrap up the summer produce and head into fall, we wanted to give one more “shout out” to our marvelous tomatoes. There are so many recipes that have tomatoes in them but we believe with the extra benefit of the herbs and spices that we highlight, it takes an ordinary recipe up a notch. And so today, as you sit on the beach, sit at your desk, or sit in carpool line, plan to add this salad to your evening meal. Remember, cilantro is most often cited as being effective for toxic metal cleansing and rightfully so because this herb is a powerful, natural cleansing agent. And the parsley that Chef Nancy so wonderfully adds is more than just decoration, friends! Parsley’s volatile oils have been shown to inhibit tumor formation in animal studies, and particularly, tumor formation in the lungs.
The spice of choice today is our terrific turmeric. This yellow super spice is known as an anti-inflammatory, gives brain health support, and can help liver detoxification.
Spicy Tomato Salad 8 Large Roma Tomatoes, chopped
1 Red Fresno Chile, stemmed, seeded and chopped
2 Cloves Garlic, grated
1 Cup Chopped Cilantro
1 Cup Chopped Parsley
1 TB Chopped Preserved Lemon OR Lemon Zest
¼ Cup Olive Oil
3 TB Lemon Juice
½ Tsp Cumin
½ Tsp Turmeric
1 Tsp Mustard
Sea Salt and Freshly Cracked Pepper to taste
Put the first 5 ingredients together in a salad bowl. Whisk the dressing ingredients together and toss with the salad.
