The brilliant colors in this salad are part of the fun – but also part of the-good-for-you in the delicious and easy salad. Shayna and I love recipes like this that are full of “stealth health” ingredients. The cabbage, carrots, berries and nuts are all part of eating better every day. If you want to serve the salad to the family for dinner, try adding a grilled sliced chicken breast to the top. Yum!

Spring Strawberry Jam Salad

The Dressing 

1/4 Cup (no sugar added) Strawberry Jam

1/4 Cup Balsamic Vinegar
1 Tsp Dijon Mustard
3 TB Nut Oil (Hazelnut, Walnut, Peanut – preferably toasted)
1/2 Tsp each Sea Salt and Freshly Ground Black Pepper

The Salad

8 Cups Baby Greens – Baby Spinach, Arugula or other Lettuces

1 Cup Thinly Shredded Red Cabbage
1 Cup Shredded Carrots
2 Cups Sliced Strawberries
4 Oz Goat Cheese, Crumbled
1/4 Thinly Sliced Green Onions
1/2 Cup Toasted Chopped Almonds

Step One To make the dressing, add the jam, vinegar, mustard and oil to a jar and shake well. (Or whisk in a bowl) Season with salt and pepper.

Step Two To make the salad, toss together the salad ingredients. Beginning with half of the dressing, toss the salad, adding more if necessary.
