Ayurvedic is an ancient healing philosophy that divides individuals into three types – or doshas. The doshas, along with lots of other interesting information governs living and eating. I had the pleasure of making an Ayurvedic lunch for participants at Cancer Wellness this week, and as Shayna would say – Clean Eating is great – and I think Ayurvedic must be the original Clean Eating!

Here’s a delicious and easy recipe from the lunch – great for the month of March when it is still cold and blustery outside!

Coconut Pumpkin Apple Soup
1 Cup Apple Juice
2 (24 OZ) Cans Pumpkin
2 Cans Light Coconut Milk
¼ Cup Lime Juice
1 TB Cinnamon
½ Tsp Cardamom
½ Tsp Allspice
2 Granny Smith Apples, Peeled and Chopped
½ Cup Nonfat Greek Yogurt mixed with the zest of 1 Lime for Garnish

Step One
Pour the apple juice into a large stockpot and reduce to ¼ cup over medium heat.

Step Two
Add the pumpkin, coconut milk, lime juice, spices and apples and cook and stir over medium heat for 30 minutes, or until the soup is warm and the flavors have melded.

Step Three
Use an immersion blender to puree the apples. Serve the soup topped with the yogurt garnish.
