No Cream Creamed Corn
- ½ Cup Unsweetened Oat Milk
- ½ Cup Veg or Chicken Broth
- 3 Cups Corn Kernels, Divided
- 1 ½ Tsp Honey
- Sea Salt and Freshly Ground Pepper to Taste
- Lots of Minced Dill and Parsley for garnish
Step One
Combine the milk, stock, 2 cups of corn, and 1 ½ Tsp of honey in the blender. Add the sea salt and pepper to taste. Blend until the mixture is a rough puree.
Step Two
Combine the remaining cup of corn kernels with the corn purée in a sauté pan and heat on the stovetop over medium for 5 – 10 minutes or until warm. Remove from the stove and stir in the minced herbs.
