Even though it’s going to be a smaller and more intimate holiday celebration this year – you’ll probably want to share some light appetizers before the big meal. Because it’s fast, pretty, inexpensive and better-for-you this is one to share over and over again. Fresh chopped dill and tangy yogurt make the salty flavor of smoked trout on a “store bought” rice cracker sing with flavor.

Dill makes these crackers look festive and taste great – but dill brings more to the party, too! Dill is rich in antioxidants and a good source of vitamin C, magnesium, and vitamin A. Some of these purported benefits are also backed up by newer research, which confirms that dill may help lower cholesterol and improve blood sugar control for those who have diabetes. (But remember much of the research that’s been done to date doesn’t directly translate to benefits for humans eating freshly picked dill because with animal studies not human.) None the less, eating dill in a recipe adds flavor, some nutrition, and helps you eat a healthier, cleaner diet in the long run. 

Smoked Trout Rice Crisps

  • 1 Pkg (3.5 oz) Rice Crackers
  • ¼ Cup Olive or Avocado Oil Mayonnaise
  • ¼ Cup Nonfat Greek Yogurt
  • 2 TB Dill, chopped
  • 1 TB Whole Grain Mustard
  • ¼ tsp EACH Sea Salt and Freshly Ground Black Pepper
  • 4 oz Smoked Trout
  • Dill Sprigs for Garnish

In medium sized bowl stir together mayonnaise, yogurt, dill, mustard, salt and pepper. Place small dollop of mixture on a rice cracker. Top with a slice of smoked trout and garnish with a dill sprig.
