Its Halloween tommorrow, so we wanted to share a fun and easy appetizer, perfect for sharing with everyone answering the door, or as a yummy snack after an evening of trick-or-treating!

Sure, Parsley makes a good garnish. We’ve all seen the little sprig adorning the side of the plate, but did you know how good PARSLEY is for you?

Parsley is a strong antioxidant and anti-inflammatory. When consumed regularly, it can combat the onset of many disorders. The vitamin C and vitamin A found in it serve to strengthen the body’s immune system.  It is also an excellent source of vitamins A, B, C, E and K. So instead of just salt and pepper, sprinkle 2 tablespoons of Parsley on your meal for a tasty healthy change.

White Bean Hummus

  • 2 Garlic Cloves
  • 2 Cans Cannellini (white kidney beans) drained and well rinsed
  • ¼ cup Extra Virgin Olive Oil
  • Sea Salt and Freshly Cracked Black Pepper to taste
  • 1 Tsp Cumin
  • 1 Tsp Turmeric
  • 1 TB Freshly squeezed lemon juice
  • ¼  Tsp Cayenne Pepper
  • Sliced Black Olives, Pumpkin Seeds and Chopped Parsley for Garnish

 Step One

Place the garlic cloves in the processor and finely chop. Add the beans, oil, salt, pepper, cumin, turmeric, lemon juice and cayenne to the food processor and process until smooth.

Step Two

Taste for seasoning and adjust with additional salt and pepper if desired. Make a fun face like the picture above with the Sliced Black Olives, Pumpkin Seeds and Chopped Parsley., Serve with a whole wheat toasted baguette, pita chips or pockets or fresh veggies.
